Our return to the sunny homeland of Italy, with its Phoenician, Greek, Arab, and Norman heritage, begins with bergamot: this citrus fruit, a hybrid between lemon and bitter orange, is considered the king of perfumery and features in most popular formulas today. Despite its importance, its volatility has limited its recognition. Thus, we return to the ancient extraction traditions. Using a curved knife, the pulp is separated to leave the peel, which becomes the "bergamot sponge." This essence is collected using a natural sponge. Our Bergamotto di Calabria, with its fruity base and delicate floral notes of jasmine, is an inspiration of this return to the past.
